Laguiole knives, forged in the Aveyron

Laguiole en Aubrac is a cutlery maker in Espalion, in the French Aveyron, in the region where the Laguiole knife comes from. Christian Valat set up the company there, with its own forge. That lets Laguiole en Aubrac make its knives from start to finish, in the region of origin and following traditional practice.

Laguiole en Aubrac is not in our webshop. Debecker supplies it on request.

The Laguiole knife

The Laguiole knife was born in the early nineteenth century in the mountain village of Laguiole, in the north of the Aveyron, as a modest farmer's knife. The bee on the spring became its best-known feature. Laguiole en Aubrac still makes it by hand in that region.

Recognised craftsmanship

Laguiole en Aubrac holds the French Entreprise du Patrimoine Vivant label, which recognises exceptional craft skills. The range runs from folding knives and table cutlery to knives for wine and the kitchen.

In the venue

For hospitality it is mainly about table cutlery and table knives: a knife the guest picks up and that carries the story of the region. On a meat menu or in a brasserie with French cooking, that stands out.

Knife making in Espalion

Espalion has been a knife-making village for centuries. In the late seventeenth century the simple folding knives from Saint-Étienne that later inspired the Laguiole knife were assembled there. In the 1870s the Salettes family opened a workshop there that forged its own blades, until a fire destroyed it in 1930. Laguiole en Aubrac is now on rue Eugène Salettes.

Preparing your request

Count which pieces you need per cover: table knife, fork and spoon, dessert cutlery and coffee spoon, and where needed a steak or fish knife. Then work with the number of covers in the room and a reserve for washing during service and for losses. Also mention how the cutlery is washed and stored, so we suggest the right version.
