Hospitality table accessories

Accessories are the pieces not every table needs, but that make a venue recognisable. At Debecker that means Jambo scented candles, diffusers and home sprays, small serving pieces from Playground's Spotlights collection, walnut dishes and a butter dish by Dibbern.

Choose them once the glass, porcelain and cutlery are settled. An accessory chosen on its own quickly looks out of place. Start from your tableware and see what fits in colour and material.

Guests smell a venue before they see a table: the entrance, the lounge, the toilets. Jambo works with three lines, each with its own fragrances.

Exclusivo includes fragrances such as Burano (spices, blond tobacco, white musk), Sahara (nutmeg, black leather, cocoa) and Yala (bergamot, jasmine, iris). Elegante has fresher and sweeter scents such as Maui (orange, freesia, cedarwood) and Cocoa (coconut, jasmine, vanilla). Prestigio includes Papua (apple, mint, moss) and Pico Turquino (pepper, saffron, sandalwood).

Most fragrances come as a candle and as a diffuser. Diffusers come in 200 ml, 500 ml and 3000 ml, with 500 ml refills. The Elegante line also has home sprays of 100 and 500 ml. Walnut dishes from XS to L and a candle care kit complete the range.

A scent works when guests notice it, not when they have to ignore it. A few rules of thumb:

• Entrance and lobby. A large 3000 ml diffuser by the door sets the tone for everyone coming in.
• Toilets. A 200 ml diffuser or a home spray keeps the room fresh between two cleans.
• Reception, bar and lounge. A candle on the bar or at reception adds warmth in the evening.
• Not at the table. Do not put a scented candle on or near the dining tables. There, the food and the wine come first.
• One scent per zone. Do not mix scents in the same space. Choose one fragrance for the venue and keep it, so regulars recognise it.

Playground's Spotlights collection has small pieces that finish a table or bar: an 18.5 x 10 cm mini frying basket for a portion of fries or tempura, a cloche 13 cm wide and 20 cm tall, shallow glass bowls with lids of 8, 15 and 18 cm, and an 8 cm tin.

For the breakfast buffet or lunch table, Dibbern has a butter dish for 250 g in white Fine Bone China, and a platinum-rimmed version in the Platin Line. According to the brand, Dibbern's white Fine Bone China is dishwasher and microwave safe. Pieces with a platinum rim are best washed by hand when used every day.

A few questions make the choice clear quickly:

• Does the accessory match the porcelain, glass and cutlery you already use?
• Where will it go: on the table, at the bar, in the entrance or on the buffet?
• How many pieces do you need, including a reserve for breakage or loss?
• How do you look after it, and where does it go between services?
• For scents: which diffuser size suits the room, and how often will you refill it?

Private customers use the same scents and bowls at home: a diffuser in the hall, a candle with drinks, a cloche over the cheese board. A Jambo candle or diffuser also makes a gift that lasts, especially with a refill. All fragrances are under Jambo in the webshop.
