Choose your glasses based on the wine you pour most often. If most of what crosses the bar is white wine and bubbles, those glasses deserve the most space in your cupboard.

In a wine restaurant, guests judge the bottle, but also the glass you pour it into. A good wine in a heavy, thick glass is a missed opportunity. With these essentials you are well set up.

A wine list often grows faster than the glass cupboard. Buying a different glass for every new wine adds up quickly. A well-planned range keeps things clear.

Start with the three basic shapes and order enough for a full dining room, with a reserve for breakage. Only then add a specialist glass, such as a larger bowl for mature red wine or a separate glass for crémant, if your list calls for it.

Stick to one brand and one collection for your basics. A new glass will then always match the rest, and you reorder exactly the same item from your order list.

A tasting needs more glasses than a regular service. If you pour several wines side by side, you need several glasses per guest, or a team that rinses in between. Plan it ahead and the evening runs smoothly.

Bites. Present cheese, charcuterie or small dishes on a serving platter from Gio Bagnara, Broggi or Playground, or on small plates from Heart & Soul.
