Hospitality serving trays

Serving trays for hospitality and for home: wooden serving boards, porcelain serving platters, cake stands and trays to bring food to the table, the buffet or the bar. Part of the range can be ordered straight from the webshop. The rest can be seen in the showroom and is ordered for you on request.

In practice the words are used interchangeably, but the use differs. A serving board is usually made of wood and carries cheese, charcuterie, bread or tapas to share at the table. A porcelain serving platter carries hot and cold dishes, from a shared main course to desserts. A cake stand puts pastries or a cake in the middle of the table or on the buffet. A tray is what the service staff use to carry glasses, cups and plates, or to hand round a series of bites at a reception.

The wooden serving boards in the webshop come from the Spotlights collection by Playground. There are boards with a handle in three sizes: a long, narrow board of 50 x 14 cm, a wider one of 45 x 25 cm and a round board of 35 cm in diameter. The boards with grooves come in 33 x 24 cm and 36 x 18 cm. There is also a round wooden plateau of 21 cm with a height of 4.5 cm, which raises a cheese or a small dessert slightly above the table.

The Loft collection adds a rectangular presenter on legs, 35.5 x 13 cm and 10 cm high. A raised plateau like this creates different levels on a buffet or at the bar, so the presentation looks less flat. The Spotlights collection also includes two rectangular metal platters of 26 x 13.5 cm, for anyone who wants a metal touch alongside wood.

For hot dishes and anything with a sauce, porcelain is the logical choice. The webshop carries serving platters by Esma Dereboy, Schönwald, Le Coq Porcelaine, Figgjo, Pordamsa, Dibbern, Heart & Soul and Playground.

Esma Dereboy, handmade Turkish porcelain, offers rectangular serving platters in small, medium and large, a square serving platter and round cake stands in black and ivory. Schönwald has oval platters and coupe platters in collections such as Delight Vibes, Shiro, Unlimited and Fine Dining; the oval platter with a ribbed rim from Delight Vibes measures 38.1 x 27.4 cm. In its Aphros line, Le Coq Porcelaine makes oval trays in glossy and matt white New Bone China, in 30 x 15.5 cm, 34.5 x 18 cm and 43 x 23 cm.

Figgjo, the Norwegian brand for professional porcelain, offers the 35 cm oval Klassik platter as well as trays and plates in gastronorm sizes, such as GN 1/1, GN 2/3, GN 1/2 and GN 2/4. That is useful when you build a buffet around standard sizes. Pordamsa, Spanish culinary porcelain, has a 29 x 16 cm tray in Sublime Coral and oval flat platters of 18 x 12 cm and 26 cm in Dining Wave. Dibbern has oval platters from 28 to 39 cm, in white, in powder pink and with a platinum rim.

Some brands are not sold through the webshop but on request. Gio Bagnara makes trays in leather, Broggi serving pieces in metal and Kaymet trays in aluminium. These pieces are often chosen per project, for example for a hotel lobby, room service or a bar, with colour, finish and size decided together.

It helps to start from how it will be used rather than from the platter itself. These questions usually make the choice clear quickly:

• What goes on it? Cheese, charcuterie and bread work well on wood. Hot dishes and sauces belong on porcelain.
• For how many people? A narrow 50 x 14 cm board suits a row of bites, a round 35 cm board a shared cheese course at the table.
• Where will it be used? At the table the size next to plates and glasses matters most, at the buffet the height and stability, on location the weight. The Spotlights boards with a handle weigh between 530 and 840 grams.
• Does it match the rest? A platter from the same brand as your porcelain, or in the same tone, gives a calm overall look.
• How is it cleaned? Check the product information to see whether a piece is dishwasher safe.

Clean wooden serving boards by hand, with warm water and a soft sponge, and let them dry upright. Do not leave wood soaking and do not put it in the dishwasher, as it can crack or warp. A board that turns dull and dry comes back to life with a thin coat of food-safe oil.

Porcelain is hard and colourfast, but it can chip when it knocks against another piece. Do not stack platters too high and put something between the pieces during transport. Porcelain with a gold or platinum rim, such as the Platin Line by Dibbern, does not go in the microwave, and Dibbern recommends washing these pieces by hand when they are used every day. For the other platters, follow the instructions with the product.

Dry metal platters straight after washing so no water marks remain. Do not use a scouring pad on a hammered or coloured surface.

A platter is rarely on its own. On a buffet it works together with displays, bowls and other equipment for your buffet. What completes the table, such as Jambo scented candles, you will find among our accessories for the set table.
