Fine dining: every plate a stage

A tasting menu tells a story in courses. Every plate has its own part to play, and the porcelain has to carry that part without upstaging the dish.

Amuse-bouche and starter. Small, surprising, textured. The Sublime line from Pordamsa or a handmade piece from Esma Dereboy, from Stone or Capsule, presents a single bite like a miniature.

Dessert and petits fours. A smaller plate with character, such as Le Coq Porcelaine Ionica or Heart & Soul Mirage, closes the menu with an accent of its own.

The cocktail bar: your glass is your calling card

A cocktail is seen before it is tasted. The glass decides how the drink looks on the bar, at the table and in the photo your guest shares straight away.

Signature cocktails. Spiegelau has a dedicated cocktail line, Perfect serve, and Zafferano has its Veneziano Mixology glasses. With two or three fixed shapes, you build a menu people recognise.

Whisky and long drinks. Nachtmann Bossa nova and Highland are crystal glasses that stand out in the hand and on the bar.

Opening a new concept: where do you start?

A new venue has to feel right from the very first evening. At the same time, you do not want cupboards full of pieces nobody uses. This is how you build the table without losing your way.

Choose your signature first. One striking piece that makes your venue recognisable: a Playground plate for the signature dish, a Zafferano cocktail glass, a lamp on every table.

Then lay the foundation. Professional porcelain that is easy to reorder, such as Schönwald Fine Dining or Figgjo Europa, and one cutlery collection for every cover.

From Mechelen to Turnhout: brasseries, hotels and caterers

Brasseries and bistros. A full dining room from lunch until late needs porcelain made for daily hospitality use. Schönwald has made it since 1879, Figgjo since 1941. With a line such as Schönwald Unlimited or Figgjo Brem, topping up later is easy.

Hotels. Use the same cutlery from breakfast to the bar, such as Comas Hotel or Robert Welch Blockley. It keeps your stock simple. For breakfast, also take a look at our buffet equipment.
